- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 garlic cloves, minced
- 2 (14 1/2 ounce) cans no-salt-added diced tomatoes, with juices
- 1⁄4 cup fresh flat-leaf parsley, finely minced
- 1 tablespoon fresh dill, finely minced
- 1 1⁄4 lbs medium shrimp, peeled and deveined
- 1⁄4 teaspoon salt, plus more to taste
- 1⁄4 teaspoon fresh ground black pepper, plus more to taste
- 2⁄3 cup feta cheese, crumbled (about 3 oz)
directions
- Preheat oven to 425°F.
- Heat oil in ovenproof skillet over medium high heat.
- Add onion and cook, stirring, until softened. (about 3 min).
- Add garlic and cook for 1 minute.
- Add tomatoes and bring to a boil. Reduce heat to medium-low and simmer for about 5 minutes, until the tomato juices thicken.
- Remove from heat.
- Stir in parsley, dill and shrimp and season with salt and pepper.
- Sprinkle feta over top.
- Bake until shrimp are cooked through and the cheese melts, about 12 minutes.
