  • combine all ingredients in 2 quart casserole dish sprayed with cooking spray. refrigerate overnight. bake at 350 for 30 minutes.

  1. I really liked this. I added more apples and then, after it was finished baking, dusted some sugar on and used a creme brulee torch to give it an extra crunch.
     
  2. This was slightly a disappointment for me. I made it for my Dad, but we both found it overly sugary. It reminded me of the instant packaged kind I used to eat when I was younger, which unfortunately wasn't a good thing. :( However, I did like the combination of spices in it! So, I'd be willing to try it again, but perhaps cut the amount of sugar in half. (I used 1/2 cup white sugar and 1/4 cup brown sugar. Also, almond extract instead of vanilla, because we were out.)
     
  3. Great tasting, especially for being healthy. The apple (and i added raisins) added a nice extra flavor. You could also probably get away with 1/4 c. sugar, plus the brown sugar. A nice way to prepare oatmeal. I cut the recipe in half and had to use quick cooking oats and it worked fine.
     
  4. This was my 1st time making baked oatmeal - I was excited about the apples, applesauce and banana in this recipe. I realized when putting things together at night that my oats were old fashioned and not rolled and concerned that the overnight soak might not be good for them, so I measured out all my dry ingredients and added the wet in the morning before popping in the oven. I used regular sugar instead of splenda and 2 eggs and threw in some raisins. It baked up wonderfully, the house smelled great and my family loved it! I felt it was a bit too sweet and might cut back some on the sugar, DH thought it was perfect as is. This was a great breakfast to feed my family before heading off on a day of skiing.
     
  5. This had a great texture, though the splenda had a bitter aftertaste to me. I'll definitely try it again w/regular sugar

Tweaks

  1. Made this for breakfast and loved it so much that it became an after dinner snack as well. I reduced the total amount of sugar to 2 tbsp brown sugar and then added 2 tbsp of a mulling spice mixture instead of the spices listed. Very tasty - thank you!
     
  2. I have been making this recipe for months. It is a definate favorite in my house. I use 2-3 eggs (depending on size) and 1/4 cup of sucanat instead of sugar (as suggested) and the results are amazing. I love being able to assemble it the night before. Makes for a quick, easy, healthy, and tasty breakfast.
     
  3. This was a huge hit. I forwarded the recipe on to several different people. I used 1/4 cup of sugar instead of the splenda and two eggs. Great results!
