  • Preheat the oven to 350°F
  • Rub the potatoes all over with the olive oil, season with salt and arrange on a baking tray. Place on the top shelf of the oven and bake for 45-50 minutes, until the flesh is soft.
  • Remove from the oven and leave to cool slightly. When cool enough to handle, use a teaspoon to scrape out the flesh into a bowl, taking care not to break the skin. Return the empty skins to the baking tray and set aside.
  • Add all the remaining ingredients to the potato flesh and mix well. Spoon the mixture back into the potato skins, season with salt and black pepper and sprinkle over a little extra Cajun seasoning. Return to the oven for 20-25 minutes, until golden-brown.
