ingredients
- 4 medium ripe tomatoes
- salt and pepper
- 2 green onions, minced
- 1 garlic clove, pressed
- 1⁄2 cup chopped parsley
- 1⁄2 cup dry breadcrumbs
- 1⁄2 teaspoon salt
- 2 tablespoons olive oil
directions
- Cut tops off tomatoes.
- Gently squeeze out some of the juice and seeds.
- Salt and pepper inside.
- Combine remaining ingredients and spoon into tomatoes.
- Place in greased bakind dish.
- Bake at 400F for 15 minutes or until lightly browned.
