Baked Tomatoes

"These are great when you have an overabundance of tomatoes from your garden (they all seem to ripen at once!) Best if large beefsteak type tomatoes are used. Recipe can be doubled or even tripled."

  • Remove stem ends from tomatoes without cutting flesh.
  • Cut tomatoes in half horizontally.
  • Set cut side up in a shallow baking dish or casserole.
  • Sprinkle with salt, pepper, onion, herbs, toasted bread crumbs; dot with butter.
  • Bake at 375°F for 15 minutes.

  1. So good! Very fresh flavor. I used six tomatoes and adjusted the recipe accordingly. This was fantastic. I may mix some fresh parmesan cheese into the topping next time. Thanx!
     
  2. Great taste! I think the celery salt gave it a nice flavor. I liked that this is different from my usual cheesy tomatoes. Thank you for a nice side dish! I should mention that I had huge tomatoes that I cut into thirds and it worked well.

I am now a full time homemaker, having retired from a career in Market Resarch for over 20 years-a profession I entered after raising 4 children. Why this field after a degree in Music Education? Who knows? It just appealed to me and the hours were right at first when my children were still at home. I eventually went full-time, but last year decided to retire and join my husband who is a retired engineer. We have had a computer for over six years now and I love getting new recipes off the internet. I print them out and have a three ring binder full of them. Some of them prove to be duds, but most are keepers.
