Baked Veggie Tex Mex Burritos

"I like this recipe for it's simplicity. Modified to suit tastes from "What's Cooking" seen on the "W" network."

directions

  • Heat oven to 350.
  • In large saute pan over medium heat.
  • saute vegetables in the salad dressing until just cooked.
  • add salsa and heat through.
  • add 1/2 cup of the cheese.
  • stir until melted.
  • lay tortillas on flat surface.
  • divide veg mixture among them.
  • fold each into burritos.
  • Place on cookie sheet lined with parchment paper.
  • sprinkle remaining cheese over.
  • bake for 15-20 min or until just crisp.
  • Add toppings of your choice.

  5. What a wonderful treat this was! Following the recipe exactly, I was able to put these together so quickly, and popping them in our son's oven upon arrival for a cookout fun day. Earlier I made all the veggies, cheese, (used "vegan gourmet" cheddar cheese for the vegan portions) salsa, and rolled them. Took right with me, and stuck in the oven for the time stated. Put some great cheese on top and these were gone in really no time flat after putting them on the table to be served. Outstanding! (( used hot salsa - "Chi-Chi's" and used my own vinaigrette dressing.) Made for Everyday Holiday Tag May 2009
