directions

  • In a large mixing bowl, combine zucchini, cheese, eggs, and seasoning and mix well.
  • Spoon into buttered 2 quart baking dish.
  • Sprinkle cracker crumbs over top.
  • Bake uncovered at 350 degrees for 35-40 minutes.

  1. This is a great way to enjoy zucchini! Simple spicing but really pulled in a lot of flavor. I used lowfat cheese crackers, and only about 1/4 of what was called for, and for us the topping was perfect and we saved a few calories ;) Really loved this - thanks for sharing the recipe!
     
  2. This is a wonderful way to do something different with zucchini. I used fresh minced garlic instead of garlic powder and inly used 1 cup of crushed cheese crackers (that seemed like enough). It stays together sort of like a moist custard. The monterey jack cheese goes very well with the zucchini. Thanx!
     
  3. We loved the flavour combination in this dish. I used Cavenders Greek seasoning in place of the salt and pepper and I used "Mini Cheddars" cheese crackers. The eggs sank to the bottom and the zucchini rose to the top but that's no big deal. Thanks for a lovely recipe!

The only thing I might change next time is to not use a cheese cracker for the topping - we liked it but did not love it so I think I'll try it with a seasoned cracker (like with garlic) instead. Very easy to prepare and extremely tasty. :) Guided by the Zaar Kitchen Dictionary, I used gouda instead of the specified monterey jack cheese which I've never seen for sale here, I used minced garlic instead of garlic powder and I added basil, rosemary and sage. I always just have to add herbs and these are among my favourites. I made this yesterday evening and enjoyed some for today's take-to-work lunch and some with tonight's dinner: weekend cooker's equally delicious Recipe #333425. Great blend of flavours; great topping! Next time I make this I'm going to follow some further Zaar Kitchen Dictionary suggestions and add a few drops of lemon juice and some pine nuts. This is a versatile recipe and I know I'm going to enjoy exploring a number of variations. Thank you so much for sharing it. Made for 1-2-3 Hit Wonders.
