- 8 ounces margarine
- 1 cup sugar
- 1 egg (minus shell of course)
- 1 egg yolk
- 1 teaspoon vanilla extract
- 1 1⁄4 cups matzo cake meal
- 3⁄4 cup potato starch
directions
- Preheat oven to 350 degrees. Line cookie sheets with parchment paper for easy cleanup.
- Sift cakemeal and potato starch together.
- Cream margarine, sugar and vanilla till light and fluffy. Add egg and yolk. Mix well.
- Add the dry ingredients to the margarine/sugar mixture and mix thoroughly. At this point you may chill dough if you need to. Put dough into a cookie press fitted with your favorite shape. Press onto parchment paper, decorate if you wish and bake for 25-30 minutes or till lightly golden brown at the edges.
- Remove baked cookies to a wire rack to cool. Watch them disappear!

Without question, I am a "foodie". I love good food, enjoy trying new recipes and love to bake. As I am still working, most of my cooking is done on the weekend. I usually make enough so that I can freeze the other portion. This way my DH & I have another meal that is right there except for heating it up. If you don't put it in the freezer, you can't take it out!
