  1. Preheat oven to 425°F Cut onions in half through the root, leaving skins on.
  2. In an oven-safe 12" skillet, heat olive oil until smoking. Add onions, cut side down. Cook over medium heat without moving them for 7-8 minutes, until dark golden brown.
  3. Add the balsamic vinegar and transfer pan to preheated oven until onions are tender, 15-20 minutes.
  4. Remove onions to a cool plate, cut side up. Pour any syrup in the pan over the onions. Let cool to room temperature before serving.
