Balsamic Roasted Chicken With Figs and Sweet Onions

- 1 whole chicken (about 4 pounds)
- Mrs. Dash table blend seasoning, to taste (or other)
- freshly ground black pepper, to taste
- 1 large sweet onion, chopped
- 20 fresh figs, fully intact with stems removed
- 1⁄4 cup balsamic vinegar
- 1⁄4 cup extra virgin olive oil
- 1 tablespoon maple syrup
- fresh rosemary sprig

- Preheat oven to 475 degrees. Rinse chicken under cold running water. Place it into a 9 x 13-inch baking dish or other roasting pan. Generously sprinkle with Ms. Dash and freshly ground black pepper.
- Place the chopped onion inside the cavity of the chicken and around it on the bottom of the pan. Place the figs around the chicken.
- Whisk together the balsamic vinegar, olive oil, and maple syrup in a small bowl or cup. Pour over the chicken. Place a few fresh rosemary springs on and around the chicken.
- Add about 1/4 cup of water to the bottom of the pan.
- Place in the oven and roast at 475 degrees for about 20 minutes to seal in the juices. Reduce heat to 325 degrees and continue to cook until juices run clear, about another 1 1/2 hours.

Leslie dances away in a beautiful portrayal of a multifaceted, everyday sorta girl. Like Leslie Caron, I wear numerous hats. Some look better on me than others, but it’s still fun to try them all on! I live incessantly and I am wild, simple and beautiful, spiritual, exciting, lusty, sweet & shy, old fashioned, infectious & modern, yacky and moody. A little bit of everything all rolled into one. </span></p>

But it is interesting to look back and mull over the trials and tribulations I have gone through, the extent of how I have changed, the friends I have lost and the companions I have gained… I certainly never expected to wish I could be 12 again, or better yet, wish I had listened to my parents when they said things like ‘save your money’ or ‘do as I say, not as I do’. I route for Michigan football year after year (not the most exciting thing to mention right now), I’ve been known to kick some butt on Halo 3, I fired my first shotgun when I was 8 months pregnant and I get excited when I see snakes (but I freak out when I see roaches). Among the more boring traits, I enjoy reading anything from Harry Potter (yea, I know) to John Grisham. I should be a sales rep for Netflix, I’m their #1 fan. Oh, who started the rumor 'the way to a man’s heart is through his stomach' - I beg to differ! I am in no way a man, and I'd prefer a nice meal over flowers any day! I am terribly allergic to cats… and I prefer dogs over diamonds too. </span></div>

I love to write and look forward to making a career of it.
