Banana and Coconut Oatmeal

"Oatmeal--it's so classic, but it's got to be one of the most versatile breakfast foods of all time. Here is one of the many ways that I have enjoyed oatmeal recently--it's so great and a good way to get in some fruit for the day. Serve with a glass of skim milk or a yogurt for a nutritious breakfast!"

  • Prepare oatmeal according to package directions on stove top or in microwave, using oats and water.
  • Peel and slice banana in half. In a separate bowl, mash half banana with a fork and stir into the oatmeal along with coconut extract. Stir in sugar or sugar substitute if desired. Slice the other half of banana into slices.
  • Top oatmeal with unsweetened coconut and banana slices, and chopped walnuts, if desired.

  1. I kind of changed this recipe some, but I still think it's a 5 star recipe :) I used milk in the oatmeal in place of water and almonds for the walnuts. Used coconut flakes cause that's all I had. So yummy and will make again!!

  4. This was a nice change of pace. I used only half a banana though as i wanted the coconut flavor to be stronger. I sprinkled a few chocolate chips in it for my toddler who then gobbled it all up. (she need a new twist on oatmeal too!) Thanks for posting - will DEFINITELY make it again!
     
  5. This was pretty good! I used 1/4 cup rolled oats & 1/3 cup milk-my usual way to make oatmeal! I still used the 1/4 tsp extract & 1 tsp coconut. To me, it needed 1/8 tsp cinnamon-for color & that great taste! I used 1 Splenda pkt, no nuts & made this in the microwave. I love banana oatmeal & this was a great new twist. Thank u for sharing.

My favorite cookbooks are the Joy of Cooking, since they tell you how to do everything in that book, and the American Heart Association Cookbook, 7th Edition since they tell you how to "health out" your favorite recipes. They also have some pretty awesome dishes in the book, for not a lot of calories. Just make sure to watch your portion size! :D Aspiration: I want to go to medical school and become a pediatrician. I want to be able to go to Africa and serve the people there, and to help out those in need here. Eventually I want to have my own private practice.
