Banana and Custard Sundaes

"Adapted from BBC Easy Cook magazine Issue 2 Autumn 2004. Original recipe calls for half a bottle of butterscotch or toffee ice-cream sauce, but as I am diabetic this is out of the question! I've written a note in the directions where to put the sauce if you would like to use it. You don't have to use vanilla ice - cream - you could use toffee or one with nuts, I chose vanilla because it's lower in sugar!"

  • Mash 2 of the bananas in a bowl and stir in the custard.
  • Spoon into the bases of four glasses.
  • Drop the scoops of ice cream on to the custard then slice in the remaining banana.
  • *Generously add sauce*.
  • Scatter with nuts if you are using them, and serve.
