Banana and Honey On-The-Go Bread

- 3 bananas, medium ripe
- 1⁄2 cup margarine
- 1⁄2 cup honey
- 2 eggs
- 2 tablespoons milk
- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 2 teaspoons baking powder
- 3⁄4 teaspoon salt
- 1⁄4 teaspoon baking soda
- 1⁄2 cup walnut pieces, chopped
directions
- Preheat the oven to 350 degrees. Spray the loaf pan with vegetable oil cooking spray.
- Peel the bananas. Break into 1-inch pieces and place in the small bowl.
- In a medium bowl cream the margarine by pressing it against the sides of the bowl with a wooden spoon until it is light and fluffy.
- Add the honey to the creamed margarine and continue beating for 50 strokes until the honey dissolves into the margarine.
- Add the eggs and milk to the margarine mixture and stir until well blended.
- In another medium bowl, mix the flours, baking powder, salt and baking soda until well blended. Set aside.
- To prepare the batter, add some of the bananas, then some of the flour mixture to the margarine mixture. Beat until smooth.
- Repeat step 7 until all the banana and flour mixture are well mixed with the margarine mixture.
- Stir in the walnut pieces.
- Pour the batter into the prepared pan and bake for 45 minutes.
- Check the bread with a toothpick. If it comes out clean, the bread is done. If not, bake 5 more minutes.
- Place on a wire rack to cool for 10 minutes.
- Remove from pan by turning upside down over wire rack. Cool completely before serving.
