Banana and Honey On-The-Go Bread

  • Preheat the oven to 350 degrees. Spray the loaf pan with vegetable oil cooking spray.
  • Peel the bananas. Break into 1-inch pieces and place in the small bowl.
  • In a medium bowl cream the margarine by pressing it against the sides of the bowl with a wooden spoon until it is light and fluffy.
  • Add the honey to the creamed margarine and continue beating for 50 strokes until the honey dissolves into the margarine.
  • Add the eggs and milk to the margarine mixture and stir until well blended.
  • In another medium bowl, mix the flours, baking powder, salt and baking soda until well blended. Set aside.
  • To prepare the batter, add some of the bananas, then some of the flour mixture to the margarine mixture. Beat until smooth.
  • Repeat step 7 until all the banana and flour mixture are well mixed with the margarine mixture.
  • Stir in the walnut pieces.
  • Pour the batter into the prepared pan and bake for 45 minutes.
  • Check the bread with a toothpick. If it comes out clean, the bread is done. If not, bake 5 more minutes.
  • Place on a wire rack to cool for 10 minutes.
  • Remove from pan by turning upside down over wire rack. Cool completely before serving.
