Banana Apple Bran Muffins

"This is my spinoff from JellyBeans Low Fat Full Taste Muffins. I didn't have zucchini so I used apple, and had a craving for bran and this recipe was born!"

  • Preheat oven to 350 degrees.
  • Spray 12 cup muffin tin with cooking spray.
  • In a large bowl, mix together flour, bran flakes, baking soda, baking powder and salt.
  • In a medium bowl, combine applesauce, banana and shredded apple.
  • Add sugar and egg to wet ingredients.
  • Add wet ingredients to flour mixture, stirring just until combined.
  • Fill muffin tins and bake for about 25 minutes or until tests clean.

Delightfully moist and light with a few minor changes: I used raisin bran (it's what I had on hand), crushing the flakes, and added about a tablespoon of lemon juice to the bananas (helps with keeping the muffins lighter colored and lighter textured). I also chopped instead of grated the apple. We ended up with about 18 small to medium size muffins.
     
  2. Very moist muffins despite having no butter or oil. I also added some blueberries. Easy to make healthy muffins.
     
  3. What brilliant muffins - so easy to do !! They will be breakfast for DD for the coming week - I even did a heart shaped one for her for Valentine's !!!! I used sultana bran so mine have got a few sultanas throughout them . They are a fabulous success.
     
  4. i made this with 1/4 cup egg beaters instead of the egg. the muffins were so moist and flavorful. will definitely be making these again!
     
  5. I made this with 2 bananas, 1/4 cup ground flax, and 1/4 cup walnuts. They turned out really nicely, after 25 minutes in the oven, i turned it down to 300 for 5 min, then turned off the oven but left them in there. they were perfect.

I am forever on the search for new and exciting low fat recipes. My husband is not quite adventurous as I am so this proves to be a challenge! I love trying new things, but I always seem to do it when having company or taking it to someones home! So far, no major disasters. My two favourite cookbooks are LooneySpoons and Crazy Plates. Close in second is the Fat Free Living series by Jyl Stienback. I also like to read cookbooks like novels and am forever checking them out of the local library!
