Banana Bars

"Another way to use up those over-ripe bananas. Sometimes I also add chocolate chips to the banana mixture or a little bit of cocoa to the frosting mixture, for a different taste."

  • Preheat oven to 350F.
  • Cream butter and sugar together.
  • Add sour cream, eggs, banana,and vanilla and mix well.
  • Slowly add flour, baking powder and baking soda and continue mixing.
  • Pour into a greased 13 x 9 inch baking pan.
  • Bake for 25 minutes.
  • Cool before frosting.
  • Combine all frosting ingredients in a bowl and beat with a hand mixer until desired consistency is reached.
  • You may need to add more confectioner's sugar.
  • Frost and slice into bars, refridgerating any uneaten portions.
  • Enjoy!

  1. Opinions on this one were pretty split between those who loved them and those who thought they were all right. Those who loved them (including myself) found them to be light, fluffy, cake-like, and yummy. Those who thought they were OK didn't love the flavor. I used chocolate chips in them. I'm still making them again since several people loved them!
     
  2. These are the greatest bars ever! We have had them for 3 days, and the pan is almost gone...I cant seem to keep my hands out of it. YUMMY! Thanks so much! I followed the recipe and will be making this again!
