  • 1 cup whole wheat flour
  • 1 cup wheat bran
  • 1 tablespoon baking powder
  • 14 teaspoon salt
  • 3 -4 very ripe bananas
  • milk
  • 1 egg (I used 2 1/2 egg whites)
  • raisins (can be added-in as well, possibly a few tbsp sugar or honey if bananas are not sweet enough-the ripe) or chopped pineapple (can be added-in as well, possibly a few tbsp sugar or honey if bananas are not sweet enough-the ripe)

  • Mix dry ingredients.
  • Mash bananas and add enough milk to make 1.5 cups total.
  • Add egg to bananas.
  • Pour wet over dry ingredients and stir just until mixed.
  • Spoon into 12 lightly greased/pammed muffin cups.
  • Bake at 400 degrees for 15-18 minutes. Remove from cups while still hot.
  • makes 12 small or 6 jumbo muffins.
