“I always have these muffins ready for my hike in the morning, along with a sliced apple. I used a cookie scooper to put the first scoop of batter into the cupcake paper, add a piece of Lindt Chili Chocolate, and cover the chocolate with another 1/2 scoop of batter. This recipe comes from Stater Bros. bran flakes cereal, but any bran flakes will work. I was surprised how high each muffin was in calories, but I figured out that a half of a square of Lindt chocolate is twenty calories in itself.”

  1. Preheat oven to 400 degrees F. Paper line 12 (2-1/2 inch) muffin cups. Combine egg, oil, milk, mashed banana, and crushed bran cereal. Mix well and let stand for five minutes. Combine flour, sugar, baking powder, baking soda and nutmeg in a separate bowl. Add cereal banana mixture all at once to flour mixture, stirring just until moistened. Divide evenly among the muffin cups, making sure that the chocolate is covered by batter. Bake 20 to 25 minutes at 400 degrees F or until tester inserted in center comes out clean.
  2. Any dark chocolate will do, but my favorite is Lindt. I break the slices in half.
