- 1 1⁄2 cups unbleached flour
- 1⁄2 cup whole wheat flour
- 1⁄2 cup raw sugar
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1⁄2 teaspoon sea salt
- 1 teaspoon cinnamon
- 1⁄2 cup toasted walnuts, chopped
- 1 1⁄2 cups ripe bananas, mashed (about 3 to 4)
- 1⁄4 vanilla yogurt
- 2 eggs
- 1⁄3 cup sunflower oil
- 2 teaspoons vanilla
directions
- In a bowl, mix the flour, baking soda, baking powder, salt and cinnamon and set aside. In a large bowl, combine the oil, vanilla, yogurt and eggs; mix well. Add in bananas. Gradually add the dry ingredients and stir until combined. Fold in walnuts.
- Pour batter into a greased 9x5x3 inch loaf pan. Bake at 170ºC for 30 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks.
