Banana Bread

"I always hated throwing out my "too ripe to eat" bananas so I decided to freeze them once and make my mother's banana bread. The added juice from the bananas makes for a very moist and flavorful bread. This is a definite family favorite."

  • Thaw bananas for 30 minute Mix margarine, egg vanilla and sugar in a bowl until well blended. Alternate adding bananas and flour (add baking soda to flour) and beat for 2-3 minutes. Pour into loaf pan and bake at 350° for 1 hour.

I have always loved to cook but haven't had much time to do so. My kids are now in college so every weekend I try a new preferably low fat recipe. I LOVE recipezaar and was introduced to the website by my sister-in-law. I have found my favorite recipes in "I've Got a Cook in Kalamazoo" cookbook.
