Banana Bread

"This recipe comes from an old cookbook called "Foods of Old New England" by Marjorie Mosser. Be careful measuring the salt and soda so as not to be too salty in taste. It yields a delicious moist loaf."

  • Preheat oven to 350F and lightly butter a loaf pan.
  • Put the bananas in a food processor; add the remaining ingredients.
  • Turn into prepared pan and bake for one hour or until bread tests done.

  1. This is very easy since everything goes into the processor, and it's yummy too! I've tried to "healthy it up" a bit by using olive oil instead of the butter, using cooking spray instead of buttering the pan, and using whole wheat flour. It turns out great this way too!
     
  2. This recipe is the best! I doubled it and made two loaves, I added 1 tsp cinnamon and 1 tsp nutmeg, and 1/2 cup chopped pecans to each loaf. It was great! Very moist and delicious! I shared with my aunt, and she wants the recipe! Thanks a bunch!
