“My son has a 16 year old appetite and a 4 year old palate. Like most teenagers, he doesn't have time for a good breakfast in the morning.   1. Preheat the oven to 400°F.
  2. Grease well one 12-cup muffin tin.
  3. Blend vegetable oil, sugar and eggs. Add dry ingredients and mix until just blended. Fold in mashed bananas, then nuts.
  4. Bake for 20-25 minutes or until a knife comes out clean.
