Banana Breakfast Muffins

"My son has a 16 year old appetite and a 4 year old palate. Like most teenagers, he doesn't have time for a good breakfast in the morning. Two of these hearty muffins plus a bottled smoothie are great on the run to school and hold him until lunch time. Add 1/2 cup chocolate chips for a special treat. But no raisins. Because they are evil, you know :)"

  • Preheat the oven to 400°F.
  • Grease well one 12-cup muffin tin.
  • Blend vegetable oil, sugar and eggs. Add dry ingredients and mix until just blended. Fold in mashed bananas, then nuts.
  • Bake for 20-25 minutes or until a knife comes out clean.
