Banana Cake With Chocolate Chip Streusel

  • Set oven to 350°.
  • Butter and flour an 8 x 8-inch metal baking pan.
  • For the streusel: in a bowl combine chocolate chips, brown sugar, walnuts and 1 tablespoon cinnamon until well blended; set aside.
  • For the cake: in a bowl, sift together the the flour, baking soda, baking powder and salt.
  • Using an electric mixer, beat the sugar, softened butter, vanilla and egg in a large bowl until smooth.
  • Add in the mashed banana and buttermilk; mix until combined.
  • Add in the flour mixture and blend well.
  • Spread about 2 cups of batter into prepared baking pan.
  • Sprinkle with half of the streusel mixture.
  • Top with remaining batter, then with streusel mix on top.
  • Bake for about 45 minutes, or until cake tests done.
  • Cool cake in pan on a rack.

  1. We liked this a lot! I had a bunch of overripe bananas that I had in my freezer to use on a rainy day and I really needed to get them out of there! I doubled the cake portion and used the stated amount of streusel in a 9x13 glass pan mostly from the others reviews and b/c I was feeling stingy with my choc. chips. There ar a lot of flavors in play but I really like the change from the ordinary and my family will eat anything you put choc chips on! Thanks I will definatly make this again, and I might even try to sub applesauce in the cake part to reduce the fat and some of the calories. Thanks ! (Because I used such a large pan I had to increase the baking time to about 55 minutes.)
     
  2. Ok, when I made this I had some reservations on it but I was pleasantly surprised. It was so good and I froze the leftover and even coming out of the freezer this stuff was awesome. I am definitely going to be making this again. It's great for using up those bananas that are on the verge of spoiling.
     
  3. A VERY Sweet cake indeed! Almost too sweet. Agree with RecipeNut that the streusel mix should be halved, it does take over the cake. I actually used a combo of peanut butter and chocolate chips. Serve small pieces with vanilla ice cream.
     
  4. I would like to say that this cake is very moist with alot of banana taste. The streusel mix was overpowering to the banana flavor. This cake is good but my family and I think that the streusel mix should be halved. I will try it again using half the streusel mix. I will be back to rerate. Thanks KITTENCAL
     
  5. This cake was VERY busy. I thought it was a good recipe because it cooked up nice. I was glad I used a 9" square pan thought. It baked up very high. Like I said it cooked up nice, but we couldn't get past the flavor. It was too many different things going on. I'm sure other people will like this recipe!
