Banana Chilli Chicken

"This recipe was created by my son. It's spicy, sweet and delicious! Please note that this fed the three of us, but I put '2' incase you're hearty eaters! It would be very simple to double up to feed more!"

  • Chop chicken breasts into small cubes and brown in deep pan with olive oil, butter and chilli flakes.
  • Slice the red pepper into thin strips. Thinly slice the chilli pepper and chop up the banana. Add them all to the pan.
  • Pour in the salsa and the stock then finally simmer with a lid on for 15-60min.

  1. First of all, I usually find it annoying to read about all of the 'changes' made. How can we give a true review if we've changed multiple aspects of the recipe? However, I made a pretty big change -- used pork instead of chicken. I will try it with chicken one day, but for today, I'm trying to empty my pantry before leaving home for three months - and I had pork. The sauce is really nice, just as described; and for what it is worth, it went very well with lean pork. Thanks to Tina and Dave's son for creating it!
