- 3 large ripe bananas
- 1⁄4 cup unsalted butter
- 2 eggs
- 1⁄2 cup brown sugar
- 1⁄2 cup granulated sugar
- 2 large eggs, slightly beaten
- 1 1⁄2 cups flour, sifted
- 1 teaspoon baking soda
- 1⁄2 teaspoon cinnamon
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon pure vanilla extract
- 1⁄4 cup semi-sweet chocolate chips
- baker's joy cooking spray
directions
- Preheat oven to 350 degrees.
- Softened butter and cream with sugar in a bowl.
- Place all dry ingredients (except the chocolate chips) in a second bowl and combine with a wisk.
- Break bananas into small section and put in food processor.
- Add slightly beaten eggs and creamed sugar mixture to food processor; blend
- Add dry ingredient mixture to wet mixture and blend.
- Add chocolate chips to mixture using a spatula.
- Spray a loaf pan with Baker's Joy Non Stick Spray.
- Pour batter into loaf pan and bake for 1 hour or until toothpick entered in the center of loaf comes out clean.
