  • Preheat oven to 375°F.
  • Place 18 paper baking cups in a pan.
  • Mash the bananas.
  • In a large bowl, combine butter with the brown sugar; add eggs one at a time.
  • Add the milk, vanilla, and mashed bananas; mix well.
  • Add flour to banana mixture, also baking powder, baking soda, and salt.
  • Mix until just moistened.
  • Stir in mini morsels.
  • Fill paper cups 1/2 full.
  • Bake 22 minutes.

  1. Muffins were rather small and didn't rise much. I would make 12 muffins rather than 18 next time. They weren't quite sweet enough--maybe a tad more sugar as well. I took my daughter to work while they were baking--getting back 10 seconds before the 22 minute timer went off--and they were a little too browned. If I were home, I would have checked sooner--they were probably done after 18-20 minutes.
