Banana Chocolate-Chip Muffins

- 3 ripe bananas (or 2 bananas and 1 grated apple)
- 1⁄3 cup oil
- 1⁄2 cup sugar
- 1 teaspoon vanilla
- 1 egg
- 1 1⁄2 cups whole wheat flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup chocolate chips
directions
- Preheat oven to 350.
- Combine bananas, oil, sugar, vanilla and egg in a large bowl, and mix well.
- Mix dry ingredients in a separate bowl.
- Add flour mixture to banana mixture, mixing until just blended.
- (ignore lumps) Fill muffin tins about 2/3 full.
- Bake 20 minutes.
- This recipe doubles easily.

These muffins were amazing, my teen even said they tasted like the "unhealthy" versions! I used 1/3 cup brown sugar (which I thinks help to make them more moist), 1/4 cup oil and only 1/2 cup chocolate chips. They were just right in sweetness this way and the chocolate didn't over power the banana flavor. I filled my muffin tins 3/4 full (got 10 muffins) and baked for exactly 21 minutes. Very moist and flavorful, thanks for the great recipe!

I regularly make my husband's all-time favourite decadent chocolate muffins. When I asked him recently if he wanted some more of his "favourite" muffins he replied "of course". Then he went on to clarify by saying "those gorgeous banana and blueberry muffins you made last week". Now that is quite an accolade for these delicious muffins. (I substituted blueberries for the chocolate chips). Needless to say, they are now made weekly and frozen for hubby to take to work. When defrosted they are as delicious as they are straight from the oven. Highly recommend this recipe which is now a firm family favourite. Just wish I got to eat more of them!

I love to cook and so I am thrilled that I found recipezaar. I work as an educational assistant in a food school so I am around food all day long. I have four children, three of which have already flown the coop so to speak but I still have my 'baby' at home. (He's 21). I am lucky in that I have my summers off so I spend a lot of time trying new recipes and catching up on my reading. I also play soccer in a ladies league to stay in shape.
