- 1⁄2 cup brown sugar
- 1⁄2 cup white sugar
- 1⁄2 cup Earth Balance margarine
- 3 mashed bananas
- 1 teaspoon vanilla
- 1⁄4 cup rice milk
- 1 teaspoon cider vinegar
- 2 cups spelt flour
- 1⁄2 teaspoon baking soda
- 1 teaspoon cinnamon
- 1⁄4 teaspoon allspice
- 1⁄2 teaspoon salt
- 3⁄4 cup non-dairy chocolate chips (PC Decadent Semi-sweet Chocolate Chips)
directions
- Preheat oven at 350°F.
- Spray muffin tins or line with paper cups.
- In a large bowl sift flour, baking soda, salt and spices together.
- Add Cider vinegar to milk and let stand.
- In another bowl, cream together margarine and sugar. Add mashed bananas, milk and vanilla.
- Add all the wet ingredients to the dry and mix well.
- Fold in chocolate chips. Pour mixture into muffin tin.
- Bake for 15-20 minutes.
