  • Preheat oven at 350°F.
  • Spray muffin tins or line with paper cups.
  • In a large bowl sift flour, baking soda, salt and spices together.
  • Add Cider vinegar to milk and let stand.
  • In another bowl, cream together margarine and sugar. Add mashed bananas, milk and vanilla.
  • Add all the wet ingredients to the dry and mix well.
  • Fold in chocolate chips. Pour mixture into muffin tin.
  • Bake for 15-20 minutes.

I am a mother of three girls. My middle girl has wheat, dairy and raw egg allergies. I have to substitute all of my regular recipes so my daughter can eat the same as the rest of the family.
