"I don't know where I got this recipe from but it was a favorite of my husband's before our waffle iron broke. The cooking time is a guess."

directions

  • In a large mixing bowl combine flour, baking powder, cinnamon, nutmeg, and salt. In a separate bowl beat together egg yolks, milk, banana, and oil. Gradually stir in the yolk mixture with the flour mixture until combined but slightly lumpy.
  • In a medium bowl whisk the egg whites until stiff peaks form. Gently fold the egg whites into the rest of the batter, leaving a few white fluffs of egg white. * Don't over mix.
  • Pour 1 to 1 1/4 cup batter into grids of a preheated, lightly greased waffle iron. Close lid quickly and do not open during baking. Bake according to manufacturer's directions.
  • When done use a fork to lift waffle from grid. Repeat with remaining batter. Keep waffles warm in oven while cooking remaining waffles. Serve with maple syrup.

  1. Nice waffles. We loved the cinnamon. Thanks for posting.

  2. These waffles are so yummy and when I was separating the eggs, 1 egg yolk fall in the egg whites so I decided to mix them all together. Probably it changed the texture. But it was my mistake. Thanks Queen Dana :) Made for I recommend tag game

  3. These were very good waffles - easy to put together and a good way to use those over ripe bananas. However, we found them a little lacking in flavor. If I make these again, I would add an extra banana or possibly a little sugar. I did add about a tsp. of vanilla. Good recipe.

  4. These are very flavorful and easy to whip up. Made for our weekly 'breakfast for dinner' meal and had them on the table in no time. Everyone had seconds so this is a definate keeper! Made for PAC Spring 2010.

I love trying new dishes. For me, food is a way of experiencing the world without leaving my home, and I'm hoping that as my two sons get older that I can convince them to come with me on my culinary adventures.
