  • 1 mashed banana
  • 12 cup milk (2% or skim)
  • 1 (8 1/2 ounce) package corn muffin mix (such as Jiffy)
  • 12 teaspoon vanilla extract
  • cooking spray
  • Optional
  • 14 cup semi-sweet chocolate chips

Directions

  1. Preheat oven to 350°.
  2. Combine banana, milk, mix, vanilla extract, and chocolate chips (if desired) in a medium bowl. Stir just until moist.
  3. Spoon batter evenly into 6 muffin cups coated with cooking spray ). Bake at 350° for 22 minutes or until a wooden pick inserted in center comes out clean.
  4. Cool in pan 10 minutes.
