Ingredients Nutrition

  • 2 cups milk
  • 34 cup sugar
  • 14 teaspoon salt
  • 5 tablespoons flour
  • 2 tablespoons cornstarch
  • 2 egg yolks
  • 2 tablespoons butter
  • 34 teaspoon almond flavoring
  • 1 9-inch baked pie crust
  • 2 large bananas, sliced
  • meringue

Directions

  1. Scald milk in double boiler.
  2. Combine sugar,salt, flour and cornstarch in saucepan; mix well.
  3. Stir milk into sugar mixture gradually.
  4. Cook over medium heat, stirring constantly,until thickened.
  5. Return to double boiler; cook for 15 minutes, stirring occasionally.
  6. Beat egg yolks slightly.
  7. Add small amount of hot mixture to egg yolks, stirring constantly until well blended.
  8. Return to hot mixture,stirring to blend.
  9. Cook for 5 minutes longer, stirring constantly.
  10. Add butter;mix well.
  11. Cool.
  12. Stir in flavoring.
  13. Spread 1/3 of the mixture in pie shell.
  14. Cover with 1/2 of banana slices.
  15. Add half the remaining filling and remaining banana slices.
  16. Top with remaining filling.
  17. Spread meringue over filling, sealing to edge.
  18. Bake in preheated 350-degree oven until lightly browned.
