Banana Flax Bars

"I was searching for a recipe to use up the bananas that are overripe in my kitchen. Most recipes had up to 2 cups of sugar plus butter. I'm trying to watch my weight and still eat some sweets. Hope you enjoy!"

  • Preheat oven to 350.
  • In a stand mixer using the paddle attachment, blend bananas, sugar, Xylitol, and flax. When well blended, banana chunks are OK, add eggs one at a time until well blended. Add baking soda and flour.
  • Scrape the inside of bowl to ensure that all ingredients are well mixed. Pour into baking pan (I used a 9x11 ceramic pan).
  • Bake for 25 minutes.
  • Frost with your favorite frosting (Mine is peanut butter!).
