Banana Fritters - Dairy Free

"Delicious crisp fritters. Make sure bananas are not too over ripe. This recipe would also be good with apple or pineapple."

  • Sift flour with salt in a bowl.
  • Make a well in the center.
  • Drop in the egg and mix with spoon, gradually adding all the flour, then slowly add the coconut milk, stirring well.
  • Add more coconut milk as needed to reach a thick cream consistancy.
  • Stir in the sugar and allow batter to rest for 20 minutes.
  • Peel bananas, cut in halk lenthwise and dip into batter.
  • Heat 1/4 inch deep oil in frying pan. When hot, fry the fritters for about 2 minutes on each side until golden brown.
  • Drain and dust with confectioners sugar and coconut mix.
  • Serve immediatly while fritters are still crisp.

Most of my recipes are dairy free since I discovered many years ago that I am lactose intolerant. While I have had to give up some much-loved recipes, we have discovered that most can be modified to accommodate the changes to our diet. Most of my recipes say dairy free but there are a few from my childhood that may have dairy! I also have an intolerance to MSG so we spend a lot of time reading labels. Usually, it is just easier to cook from scratch, so we don't use many pre-made foods from the grocery store.</p> I like recipes I can make with minimal ingredients, real food I have in my kitchen, that are also easy to make!
