ingredients
- 1 1⁄2 bananas, peeled, cut into 1/2 inch rounds, frozen (this is an important step!)
- 1 cup soymilk lite (1%)
- 1 cup ice cube
- 1 tablespoon honey
- 1⁄2 teaspoon vanilla extract
directions
- Combine all ingredients in blender.
- Blend until smooth.
- Pour into 2 glasses and serve immediately.

Although Im not lactose intolerant or vegetarian ( < -- any more ;) ) I like to try and cut down on the amount of dairy in my diet so thought Id give this recipe a whirl. And even tho they have improved recently some of the sot milks on the market dont taste all that great ! so any improvement is welcome. I reduced the quantities a little as the drink was just for me ( Ill try sneaking it up on my bf another day hehe ) I still found the honey was too much at half a tablespoon but thats cos I dont have a really sweet tooth, a generous teaspoonful was enough for me. I was a bit wary about what kind of texture frozen banana would have so I froze half and used half fresh - this worked fine and gave a nice creamy texture. I also dont have vanilla extract so I used a small pinch of cinnamon and nutmeg. It looked and tasted very nice. I would definitly make it again, maybe cutting down on the ice cubes a bit and mixing the bananas with another fruit for a bit of a kick - maybe strawberries or blueberries.
