  • Mash bananas in a small bowl and add lemon juice.
  • Cream shortening, butter, sugar, and eggs; add bananas, buttermilk; add vanilla.
  • Sift flour, baking soda and salt together in separate bowl then add to cream mixture.
  • Fold in optional nuts.
  • Chill dough for one hour.
  • Using an ice cream scoop, scoop 12 cookies onto a parchment lined baking sheet.
  • Bake at 375 for 10-11 minutes.
  • Cool completely on a cookie rack before frosting. Refrigerate frosted cookies.
  • Frost with Cream Cheese Frosting:

  • 1 lb. powdered sugar.
  • 8 oz. cream cheese (softened).
  • 1/2 cup butter (softened).
  • 1 teaspoons vanilla.
