  • In a large bowl mix together, Half cup of margarine, Three quaters cup of brown sugar, 2 large eggs and 3 over riped mashed bananas. Mix together till smooth.
  • Then add 2 cups of self raising flour and a pinch of salt.
  • Mix together untill smooth.
  • Transfer to a greased 2lb loaf tin.
  • Leave for half a hour to settle.(optional).
  • Put in a pre-heated oven on the middle shelf at 180 for 60 minutes.
  • Leave to cool.

Ive only recently started cooking basic things like cookies, muffins, loafs/bread and things like stew, lasange and cottage pies. I work as a hairdresser/beautician and love to cook good tasting food as my mother is a very plain in her cooking, i like forigen foods that have unique tastes, especially chinese/stirfrys.
