  • Preheat oven to 350°F.
  • Grease a loaf pan.
  • Mix bananas and eggs together in a large bowl or a stand mixer with the paddle attachment.
  • Stir in the flour sugar, salt, and baking soda.
  • Add nuts and blend well.
  • Place batter in loaf pan sprinkle some raw sugar and more nuts on the top of the batter.
  • Bake 1 hour.

  1. I don't really care for bananas, but I made these for DH and his father, and they both loved them! I doubled this, made it into muffins, and eliminated the nuts because I was out. I also had to substitute some oat flour for part of the regular flour, and even still, they turned out fantastic! With doubling the recipe, I got 24 muffins and I baked them for 25 minutes. However with a single batch, they probably would have been done in 20 minutes. I filled the muffin tins almost completely, and they baked up perfectly round and looked fantastic. Thanks for a great recipe Chef Ain't B's! I will make this again when we have bananas to use up.
     
  2. Nice banana bread...wasn't sure about the cinnamon in it, but you barely taste it.
