Banana Nut Bread

"This bread is great and is very moist if you follow the instructions. This recipe is from a Betty Crocker cookbook from quite a while ago. It will seem to take forever to cook, it will be worth it."

  • 2 12 cups all-purpose flour, not self rising
  • 12 cup granulated sugar
  • 12 cup of packed brown sugar
  • 3 12 teaspoons baking powder
  • 1 teaspoon salt
  • 3 tablespoons vegetable oil
  • 13 cup milk (soy and rice milk work as well)
  • 1 egg (egg replacer does NOT work)
  • 1 14 cups mashed bananas, 4 works well though (2 or 3 medium)
  • Optional

  • 1 cup of chopped nuts (optional)

  • Preheat oven to 350 degrees F.
  • Grease bottom only of loaf pan, 9x5x3 inches, or 2 loaf pans, 8 1/2x 4 1/2, 2 1/2 .
  • Mix all ingredients. (Order does not matter).
  • Beat for 30 seconds with beater or hand mix until even,.
  • Pour mixture into pan(s).
  • Bake until toothpick inserted in center comes out clean, should take about 65-70 minutes.
  • Loosen sides of loaf of loaf from pan, remove if you wish.
  • Cool completely before slicing,.
  • To store, wrap and refrigerate no longer than 1 week.
