ingredients
- 2 1⁄2 cups all-purpose flour, not self rising
- 1⁄2 cup granulated sugar
- 1⁄2 cup of packed brown sugar
- 3 1⁄2 teaspoons baking powder
- 1 teaspoon salt
- 3 tablespoons vegetable oil
- 1⁄3 cup milk (soy and rice milk work as well)
- 1 egg (egg replacer does NOT work)
- 1 1⁄4 cups mashed bananas, 4 works well though (2 or 3 medium)

- 1 cup of chopped nuts (optional)
directions
- Preheat oven to 350 degrees F.
- Grease bottom only of loaf pan, 9x5x3 inches, or 2 loaf pans, 8 1/2x 4 1/2, 2 1/2 .
- Mix all ingredients. (Order does not matter).
- Beat for 30 seconds with beater or hand mix until even,.
- Pour mixture into pan(s).
- Bake until toothpick inserted in center comes out clean, should take about 65-70 minutes.
- Loosen sides of loaf of loaf from pan, remove if you wish.
- Cool completely before slicing,.
- To store, wrap and refrigerate no longer than 1 week.
