  1. In a large bowl, stir together flour, oats, sugar, baking soda, and salt. Set aside.
  2. In a small bowl, mix egg, banana, milk, and oil. Add liquid mixture all at once to dry ingredients, stirring just until moistened.
  3. Spoon batter into greased muffin cups 2/3 full. Bake in a 400 degree oven for 15 to 18 minutes.
  4. Combine coconut, pecans, honey, and margarine. Sprinkle about one teaspoon of the topping on each muffin. Return to oven for 1 minute.
