- 1 1⁄2 cups all-purpose flour
- 1⁄2 cup whole wheat flour
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1⁄2 teaspoon baking soda
- 1⁄4 teaspoon salt
- 1⁄8 teaspoon ground nutmeg
- 2⁄3 cup walnuts, chopped
- 1 large egg
- 3⁄4 cup light brown sugar, packed
- 1 1⁄3 cups bananas, ripe mashed
- 6 tablespoons canola oil
- 1 teaspoon vanilla
directions
- Whisk together first 7 ingredients, then fold in walnuts. Whisk together last five ingredients. Add the two bowls together stirring lightly just until moistened. Batter should not be smooth. Bake about 18 minutes at 350 degrees.
