ingredients
- 1⁄4 cup plain yogurt
- 1⁄4 cup vegetable oil
- 1 egg
- 1⁄4 cup honey
- 3⁄4 cup mashed ripe banana
- 1 teaspoon vanilla
- 1 teaspoon baking soda
- 1⁄4 teaspoon salt
- 1 cup all wheat flour (plus or minus almond meal mixed in)

- 1⁄4 cup oats
- 3 tablespoons flax seeds
- 1⁄4 cup almond meal
directions
- Mash bananas into a bowl with a fork.
- Add the yogurt and vegetable oil, mix well.
- Add the egg, honey, and vanilla continue mixing.
- In a seperate container mix the flour, almond meal (if using take about 1/4 cup of flour out and add almond meal), oats, flax seeds, salt, and baking soda.
- Add dry ingredients to wet ingredients and stir in chopped almonds and frozen or fresh blueberries.
- Grease muffin tin and fill with batter.
- Bake at 350 degrees for approximately 20 minutes.

These are awesome! I hate feeling like I'm eating dessert for breakfast, as some muffins and pancakes make me feel, but these are just right! Just enough sweetness to be yum, but not overwhelming! I did use vanilla yogurt, as that's what I had on hand - so there was some extra sugar from that - and almonds were the only "extra" I added from the list. Super easy and perfect treat for breakfast!
