Banana Oat Breakfast Bars

"A quick and delicious breakfast bar. I make these for my daughter and husband to get them fed and out the door quick in the morning. I have made these with a variety of combinations of dried fruits. You can also try diced carrots or parsnips in place of the cranberries for a nice change. Its an easy way to sneak veggies into a kid's diet!"

  • Preheat oven to 325 degrees. Grease a 13"x9" pan or use a parchment sling.
  • Combine the oats, baking powder, salt and cinnamon. Make a well in the center.
  • In another bowl combine eggs, banana, applesauce, milk, maple syrup, brown sugar and vanilla.
  • Pour the liquid mix into the dry and stir until just combined. Add the dried cranberries.
  • Place in greased pan and bake for 45 minutes.
  • Cut into bars and enjoy.

  1. I gave this recipe 3 stars. I mixed reviews on this recipe. My future hubby didn't like these only after they cooled. His complaint was the dried cranberries but when warm he commented about how he liked the banana flavor. My 7 yr old newphew and I really liked these bars. I made some minor changes to the recipe. I wasn't sure what oatmeal to use so I used Quick Oats. I used 2 small bananas, I used unsweetened applesauce, I used sugar free pancake syrup as I can't have maple syrup, so I left out the salt as I've found adding salt to baked made with the SF Syrup is not good. I used Splenda brown sugar and I added a scoop of protein powder to bump up my protein. Overall these were so good and I'll make these again for sure! Thanks for posting a good recipe!   2. It's a great recipe! I make those for my kids and they're great! You could also add raisins instead of cranberries if you dont have those.
