Banana Pancakes - Grain Free, Milk-Free

"Only 3 ingredients. Be sure to use VERY ripe bananas or it may be a tad bitter. Texture is a little different than your typical pancake, but if avoiding grains and simplicity is important to you, these are a nice alternative."

  • 1 banana (extremely ripe and mashed with a fork)
  • 3 eggs
  • 2 tablespoons nut butter (i.e. peanut or almond butter)

  • Beat 3 eggs, add mashed banana and nut butter and mix together until fairly smooth. Batter will be pretty thin.
  • Pour about 1/4 cup for each pancake onto a hot skillet or pan (grease first unless non-stick or cast iron), and flip when the outer edge begins to set. Cook on each side until golden. These cook fast so keep an eye on them!

  1. The first time these were so good with recipe#19678 and sliced bananas on top! However I tried it again forr DH with those additions as well and the strongest flavour was egg. The first time I used organic bananas, half good eggs at least they said free range but still where can I get organic grass fed eggs??? For the nut butter I used almond hazelnut as I did the second time as well with a little cashew butter. Maybe the eggs were old the second time? Made for FEBRUARY'S SUN and SPICE EVENT.
