- 12 egg whites
- 2⁄3 cup uncooked oatmeal
- 2⁄3 cup Fiber One cereal
- 2 bananas
- 6 tablespoons jam (no or low sugar)
- 1⁄2 teaspoon vanilla extract
- 1⁄2 teaspoon cinnamon
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 6 g stevia plus (6 packets)
- 1 ounce chopped pecans
directions
- Preheat oven to 350 degrees.
- Mix everything except the cereal and nuts in a blender. (Note: recipe does not state exact amount of cinnamon or vanilla - 1/2 teaspoon is a guesstimate).
- Fold in the cereal and mix well.
- Line a muffin tin with aluminum cupcake liners and spray with non-stick cooking spray.
- Pour the muffin batter evenly into each tin and top with the nuts.
- Bake for 30 minutes.
