“Although the recipe does not call this, I like to soak the oatmeal in the milk for about 10 minutes, I really think it improves the texture of the pancake. These are a must served with maple syrup or honey. Your kids will love these, I know my "big" one does!”

Directions

  1. In a medium bowl combine the oats, flour brown sugar, baking powder, baking soda and cinnamon.
  2. In another bowl whisk together sour cream, milk, eggs and vanilla.
  3. Whisk dry ingredients into the sour cream mixture JUST until blended.
  4. Fold in mashed bananas, raisins and 1/4 cup melted butter; mix to combine.
  5. Drop about 1/3 cup of batter onto hot skillet or griddle that has been brushed with melted butter.
  6. Cook pancakes until bubbles form on top and bottoms are golden brown (about 2 minutes on each side).
  7. Delicious!
