Barbecue Chicken Quesadilla

"This is a true favorite at all my parties... people devour it!I also make this for dinner when I am in a hurry but really hungry. Its a modified version of the California Pizza kitchen's BBQ Chix Pizza. You can grill your own chicken or buy Purdue's pre-cooked chicken strips."

  • Preheat oven to 350 degrees.
  • Mix chicken and BBQ sauce.
  • Layer all ingredients over tortilla top with other tortilla.
  • Place in oven for 7 minutes or until cheese is melted.
  • Serve with Sour Cream, salsa and guacamole.

  1. Easy and fast to make and delishious. You can use pretty much whatever kind of cheese you have and it will still taste great. I'm now wondering what it would taste like with ranch dressing instead of bbq sauce...

  3. This was great. Used whole wheat tortillas, otherwise followed the recipe exactly. The only thing that would make these even better is chopped cilantro!
     
  4. I made this tonight for the boys and they LOVED it. I omitted the onion because they don't like it and used cheddar cheese because that's all I had. I used leftover barbeque chicken on the grill, cut it into small pieces and added more BBQ sauce. Quick and easy way to use leftover BBQ chicken. Thanks for a great recipe, Celly!

Hi all..I am back in Maryland!!! Recently had twin boys, they are a month old! I am married to my best friend, whom is the taster of all my Recipezaar creations. I was born in Chile but raised in the states.. Maryland to be exact. I find myself cooking more now than ever... before I used to "entertain" now I have to feed.. lol! I took a short break while pregnant, as all I wanted was crepes, pancakes and PBJ sammies. Cooking fell way last on my list of things to do while awake. Now I am on maternity leave and have to make quick and easy meals. I am a huge fan of short cuts and "easy" recipes BUT healthy eating is a must. I love watching the food network and absolutely adore Rachel Ray. I think Emeril is amazing, but I just can't cook his recipes.. too many ingredients :) At best I cook fusion meals, I love Mexican and wish I could make Chilean meals like Grandma... but instead I cook United Nations style.. with TONS of short cuts!! I admit I am a cheater.. I wish I could stay in the kitchen and slave over meals.. but instead I model after the 30 minutes or less Chef...
