  • Grind the cumin seeds and fennel seeds and cloves in a bowl with the salt and pepper.
  • Chop the rosemary and thyme leaves, orange zest and garlic together finely.
  • Put into a bowl with the spices.
  • At the balsamic vinegar, ketchup and olive oil.
  • Mix together.
  • Rub the sauce over your meat. Let the meat rest for at least 1 hour. Better to put the marinade ont the meat the night before.
