  • 20 large shrimp, peeled and de-veined
  • 13 cup mayonnaise
  • 12 ripe mango, grated
  • juice from 1/4-1/2 fresh lime
  • 18 teaspoon sea salt
  • 1 tablespoon canola oil
  • 20 bamboo skewers, soaked in water for 10 minutes

directions

  • Skewer the shrimp and brush them with canola oil.
  • Heat the barbecue.
  • Mix together the mayonnaise, grated mango, lime juice and salt. Stir mixture well to combine. Set aside.
  • Barbecue the shrimp until cooked -- about 1 minute on each side or slightly longer for larger shrimp.
  • Serve shrimp immediately mayo and slice of lime.
  • Note: you can use smaller shrimp with more per skewer.

  1. This was delicious. I went with the previous reviewer's suggestion and added a bit of cilantro and red pepper flakes to the mango mayonnaise, it turned out really well. The shrimp could benefit from marinating, but I decided to just squeeze a bit of lime and sprinkle sea salt and cilantro over them, and it turned out well. Maybe next time, I'll also sprinkle garlic and red pepper flakes on the shrimp, too. But I'd definitely make this again, because we all really enjoyed it. Thanks, momaphet.   2. I really struggled with rating this. I'm giving it a 4 for the potential. It could so easily be a five!<br/>I am no fan of heat in my food but both the shrimp and Mango Lime Mayonnaise could use some 'ommp'. I will make this recipe again adding some cilantro and a teeny bit of crushed peppers or an even teener bit of chilis to the mayo. It was tasty but missing something. I'd also do something to jazz up the flavour of the shrimp. The lime is great with it but perhaps a marinade for 30 minutes would ramp it up a bit. For those who do like heat I'd say go for it. Both components of this dish would handle it well!<br/>Made for Food.Commandos ~ ZWT 7
