  1. Bring water to a boil in a saucepan and then add the barley. Reduce heat and simmer covered for 25 minutes. Drain in a colander and rinse under cold water; drain again. Transfer to a large bowl.
  2. Stir in remainder of the ingredients and toss to combine.
  3. Serve chilled or at room temperature.
