ingredients
- 1⁄4 cup long grain rice, uncooked
- 1⁄4 cup pearl barley
- 1 tablespoon olive oil
- 1 cup chicken broth
- 2⁄3 cup water
- 1⁄4 cup mushroom (diced)
- 1⁄4 cup celery (diced)
- 1⁄4 cup carrot (diced)
- 1⁄4 cup onion (diced)
- 2 tablespoons soya sauce
directions
- Add long grain rice and barley to small frying pan with small amount of olive oil added.
- Cook over low heat until rice and barley is nicely browned.
- Add all vegetables and cook until tender.
- Add chicken broth, water and soya sauce.
- Bring to a simmer, cover with tight fitting lid, turn to low and cook for 20 minutes until liquid is absorbed.
