  • Heat oven to 350 F degrees.
  • Melt butter and saute onion and barley.
  • Pour mixture into a casserole dish.
  • Add rest of ingredients.
  • Cook 1 hour covered.

  3. Wow! Who knew barley could be such an awesome sidedish?! I used olive oil instead of butter. I added corn and sliced black olives. Also melted a little cheddar cheese on top during the last 5 minutes. This is so much better than the same old rice dish!
     
  4. Very good! Would go good as a side for mexican dish. It reminded me of Spanish rice. I used salsa picante.
     
  5. I added leftover chicken that I needed to use up and cheese during the last few minutes in the oven. At the table my husband and I also added sour cream and that made the dish go from good to amazing. Tonight I'm planning to serve it the same way with a side salad and corn muffins. <br/><br/>I forgot to cover it and it came out fine just needed more time in the oven so if you don't want to cover it just plan for a longer cooking time.

  1. Pro tip: Add chunks of avocado before serving. So good.
     
  2. So I made a few changes to this, and the result was a yummy and very filling vegetarian meal! The first change I made was to sauté the onion and barley in one generous TB of oil instead of the 3 TB butter. I also added three large zucchini (to make it a meal) and reduced the chicken broth by half a cup to account for the juice the zucchini might add. I, like others, had to cook it 15 minutes longer than the suggested cook time. It still had some liquid remaining after the extra 15 minutes, but the barley was done and my family and I agreed we actually liked a little liquid; made it more stew like. Served it with red grapes and MMM!! Thanks for a keeper!

  5. This was excellent. I used pearl barley and a 9x9 pan. I substituted 1 tbsp olive oil for the butter, used 2 1/2 cups chicken broth and 1/2 cup of salsa and cooked for 50 minutes. It came out just right! Will definitely make again. Thanks for posting!

Zaar...Wow, what a place! I'm one of the old timers of Zaar. I can't count the number of wonderful dishes I cooked in the past few years since joining. Along the way I have had the pleasure of meeting several Zaar chefs. Talk about your fruits and nuts! lol. I have enjoyed meeting them all. Family: What's to say...I have had the same sweet husband forever (Good thing....I'd hate to have to break a new one in...=) and live close to a couple of grown children. (Maybe you've met Smoke Alarm Jr. ..her brown rolls are sooo good!) Therefore, my family gets together often to enjoy each other's company and cooking. My greatest joy is six "little to tallerthanme" kids running around calling me Grammy. They wear me out! lol For the past thirty years I have been a Special Education teacher for grades 9-12 and love it. Took some time off last year to recovery from surgery, chemotherapy and radiation for breast cancer. (Loved the radiation....I keep imagining that we are absolutely napalming the nasty cancer cells tohellandback to keep the little suckers from returning. =) My prognosis is good and now "I'm back in the saddle again". lol. Being a north country "gurl", I am happiest outside...walking, fishing, sitting in front of an outdoor fire or being on water (although in February it's a bit stiff....=0) When indoors I like to read, garden, knit, quilt and paint. During cold Maine weather I like to warm my feet on a very large ( 100 pounds of long legs and huge feet), sweet and furry golden retriever named Kerry (aka KTBRD: Kerry the big red dawg..lol) . In the summer, the dawg and I round up the grandkids, hit the local dairy bar for a Mounds Sundae that is to die for!!!=0) . Then spend a lot of long and lazy summer days at camp . All in all...Boy, Life is good! =)
